Milk Biscuits Recipe

8 oz pastry flour
4 oz cake flour
1/4 oz sugar
3/4 oz baking powder
a pinch of kosher salt
2 oz butter, cold and cubed
1 oz shortening
8 oz milk
2oz cream for wash
Method
- Sift the flours, sugar, and baking powder. Add the kosher salt. Cut in the cold butter and the shortening. Mix in the milk.
- Roll to about 1/2 inch thick. Cut into 3 inch rounds. Wash with the cream.
- Bake at 375 until golden brown.
