Pineapple-Coconut Biscuits Recipe

Ingredients

3 oz (90 g) flour
4 teaspoons sugar
1/2 teaspoon (2.5ml) baking powder
4 oz (120g) low-fat dry milk
1 can 227g , drained, crushed pineapple, plus 4 tablespoons (60ml) juice
2 tablespoons (30ml) water
1/2 teaspoon (2.5ml) vanilla extract
4 teaspoons (20ml) desiccated coconut

Method

  1. Preheat oven 180c / gas 4.
  2. Sift together the first 3 ingredients.
  3. Add remaining ingredients except for the coconut and mix well.
  4. Drop teaspoonsful of the mixture on to a none-stick baking sheet, allowing room for the biscuits to spread.
  5. Sprinkle biscuits with the coconut.
  6. Bake for 15 Min’s or until lightly browned. Cool on wire rack.
