Ingredients

1 cup sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
1 cup mashed sweet potatoes
3 tablespoons milk (approx.)

Method

  1. Sift together dry ingredients.
  2. Cut in shortening with 2 knives or a pastry blender.
  3. Add sweet potatoes and enough milk to make a soft dough.
  4. Knead lightly if desired.
  5. Roll to 1/2” thickness then cut in rounds and place on baking sheet.
  6. Bake at 425 for 15 minutes.
